  • 1/4 cup fresh coriander leaves

  • 1/2 tsp saffron soaked in 1/4 cup warm milk

Step-by-Step Instructions for making Briyani

    Step 1: Prepare the Rice

    • Wash the basmati rice thoroughly and soak it for 30 minutes.
    • Boil water with bay leaf, cloves, cardamoms, cinnamon stick, and a pinch of salt.
    • Cook the rice until it’s 70% done. Drain and set aside.

    Step 2: Marinate the Meat/Vegetables

    • In a bowl, mix chicken/mutton or vegetables with yogurt, ginger-garlic paste, turmeric, red chili powder, garam masala, and salt.
    • Let it marinate for at least 1 hour for better flavor absorption.

    Step 3: Cook the Gravy

    • Heat oil/ghee in a pan, add cumin seeds and sauté until aromatic.
    • Add sliced onions and cook until golden brown.
    • Stir in chopped tomatoes and green chilies. Cook until the tomatoes turn mushy.
    • Add the marinated chicken/mutton or vegetables. Cook for 20-25 minutes until tender.

    • In a heavy-bottomed pot, start with a layer of gravy at the bottom.
    • Add a layer of semi-cooked rice on top.
    • Sprinkle some coriander, mint leaves, and saffron milk over the rice.
    • Repeat the layers until all the rice and gravy are used, finishing with a rice layer.

    Step 5: Dum Cooking (Steaming)

    • Cover the pot with a tight lid or seal with dough to trap the steam.
    • Cook on low heat for 25-30 minutes for the flavors to meld together.
