For this biryani recipe, you will need:For the Rice:
- 2 cups basmati rice
- 4 cups water
- 1 bay leaf
- 4 cloves
- 2 cardamoms
- 1 cinnamon stick

- 2 tsp ginger-garlic paste
- 1 tsp turmeric powder
- 2 tsp red chili powder
- 1 tsp garam masala

- 2 large onions sliced
- 2 tomatoes chopped
- 2 green chilies slit
- 1/4 cup fresh coriander leaves
- 1/4 cup fresh mint leaves
- 1 tsp cumin seeds
- 2 tbsp oil/ghee
- 1/2 tsp saffron soaked in 1/4 cup warm milk
Step-by-Step Instructions for making Briyani
Step 1: Prepare the Rice
Wash the basmati rice thoroughly and soak it for 30 minutes.
Boil water with bay leaf, cloves, cardamoms, cinnamon stick, and a pinch of salt.
Cook the rice until it’s 70% done. Drain and set aside.
Step 2: Marinate the Meat/Vegetables
In a bowl, mix chicken/mutton or vegetables with yogurt, ginger-garlic paste, turmeric, red chili powder, garam masala, and salt.
Let it marinate for at least 1 hour for better flavor absorption.
Step 3: Cook the Gravy
Heat oil/ghee in a pan, add cumin seeds and sauté until aromatic.
Add sliced onions and cook until golden brown.
Stir in chopped tomatoes and green chilies. Cook until the tomatoes turn mushy.
Add the marinated chicken/mutton or vegetables. Cook for 20-25 minutes until tender.
Step 4: Layering the Biryani
In a heavy-bottomed pot, start with a layer of gravy at the bottom.
Add a layer of semi-cooked rice on top.
Sprinkle some coriander, mint leaves, and saffron milk over the rice.
Repeat the layers until all the rice and gravy are used, finishing with a rice layer.
